Cajun Pulled Pork Recipe
Pulled pork is always popular, and is delicious served on slider buns. It's easy to make in both the Instant Pot or slow cooker (or even a smoker). It's cheap, since it is usually made from a pork shoulder or butt. The following Cajun Pulled Pork is perfect to serve on a Mardi Gras buffet, or actually anytime. The spicy pork is mixed with a luscious Cajun Barbecue Sauce and is served on slider buns (Crispy French rolls or even better, brioche buns). Of course the pork should be topped with Mardi Gras Slaw to make a real pulled pork sandwich.

This tender pork can be made easily in either the Instant Pot or the slow cooker, whichever fits your lifestyle. Extra pork freezes well. The pork roast is rubbed with Cajun spices, which flavors the broth and adds a bit of spice. Add a little or lot as you like to moisten the mixture. If you're serving this on a buffet table, it will stay warm in a slow cooker.

24 Servings

6 to 8 pounds bone-in pork butt, or pork shoulder
2 to 3 tablespoons Cajun seasoning
1 cup chicken broth

  1. Rub the spices on all sides of the roast; pour the chicken broth around the roast.
  2. Instant Pot: Cover, set the valve to sealing, and set to Manual for one hour and 30 minutes.
  3. When the cycle is finished, release the pressure.
  4. Remove the roast from the pot to cool.
  5. Strain the juices and place in the freezer to allow the fat to rise to the top and harden; remove the fat and discard.
  6. Shred the pork, discarding bones, fat, veins, etc. and add enough of the juices to moisten.
  7. Slow Cooker: Place the roast in a 6-8 quart slow cooker.
  8. Let cook on low 8-12 hours or until very tender.
  9. Proceed with the recipe as in the Instant Pot directions.
  10. Add enough Cajun Barbecue Sauce and defatted strained pork juices to moisten.
