Bread Machine Brioche Recipe
Brioche is a rich, buttery, non-sweet French bread that is time consuming and fairly complicated to make at home. However, when the dough is made in the automatic bread machine, it’s easy. Brioche dough can be made in several shapes – traditional, slider rolls, hamburger buns, etc. The following recipe for Bread Machine Brioche is easy and the results may not be quite as perfect as you would get in a custom French bakery, but these rolls are extremely good.

20 Rolls (depending on size)

4 eggs
1/2 cup warm water
3 1/2 tablespoons powdered milk
3 1/2 cups flour
3/4 cup plus 2 tablespoons butter
1 teaspoon salt
2 tablespoons yeast

1 egg yolk, beaten

  1. Place all ingredients except egg yolk in the bread machine in the order listed.
  2. Turn the machine to the dough setting and start the cycle.
  3. Check during the first few minutes to make sure the ingredients are mixing properly. You may need to scrape the ingredients down. If the dough is too soft and doesn’t form a ball, add a bit more flour; if it is too stiff, add a little more water.
  4. When the cycle is finished, turn the dough onto a floured surface.
  5. Divide into 4 pieces.
  6. Divide three of the pieces into 8 balls each and place in greased brioche pans.
  7. Divide the remaining dough into 24 small pear-shaped pieces.
  8. Make a small hollow in dough in pans; place smaller pieces of dough on top with larger end in hollow.
  9. Brush brioches with egg yolk.
  10. Let rise in a warm place 30-45 minutes, or until very light.
  11. Bake brioche at 400° for 20-25 minutes or until golden brown. Remove from the oven and cool on a rack.

  1. Brioche Slider Buns: Roll the dough on a floured surface to 1” thickness. Use a 2” biscuit cutter to cut rounds; reroll the scraps.
  2. Brush with the egg yolk and sprinkle with sesame seeds.
  3. Let rise until doubled in bulk and bake at 400° for 20-25 minutes or until golden brown.
