They are also delicious and addicting: Cheesecake and cherry fillings are swirled into extra moist brownies made easy with the use of the versatile Mom’s Brownie Mix which is easy to make and keeps on the pantry shelf for months. If you don’t already have it on the shelf, it is a good idea to make it now – it takes only about 20 minutes and saves lots of time when making brownies and other desserts.

These brownies are extra moist, and are ideal to serve as a dessert after a romantic dinner. They are also great for snacks and stay moist for several days. For an extra special dessert, place a brownie on a plate, cover with high quality vanilla ice cream, and top with warm fudge sauce. You can’t go wrong.


32 Brownies

4 cups Mom’s Brownie Mix
2 cups grated zucchini
4 eggs
1 tablespoon vanilla

Filling:
1 8 oz. package softened cream cheese
1/3 cup sugar
1 egg

1 20 oz. can cherry pie filling

  1. Preheat oven to 350°.
  2. Spray a 9" x 11" baking dish with non-stick spray.
  3. Mix the brownie mix, zucchini, eggs, and vanilla; spread in the prepared pan.
  4. Beat the cream cheese with the sugar and egg until smooth; drop spoonfuls over the surface of the brownies.
  5. Drop spoonfuls of the cherry pie filling over the surface of the brownies.
  6. Using a knife, swirl the fillings.
  7. Bake 25-30 minutes, or until just set.
  8. Remove from the oven and let cool thoroughly before cutting into 32 squares.
